Chicken Casserole Recipe |

Author: 101TastyChickenRecipes.com With a spicy touch of cumin and chili, this dish has a Mexican flair to it. It is often served as an interesting change from the basic chicken casserole.
Preparation Time: 10 minutes Cooking Time: 35 minutes
Ingredients: • 2 cups cooked chicken, chopped • 3-4 tomatoes, chopped • 1 large white onion • 2 tablespoons of cooking oil or margarine • 1 chicken bouillon cube dissolved ½ cup hot water • 1 teaspoon of each: oregano, cumin, salt and chili powder (you may like to add up to 2 teaspoons chili powder) • 6 corn tortillas • 1 cup grated cheddar cheese
Method: Grease a large baking dish. In medium skillet, cook the onions in the margarine or oil until soft. Add chicken, tomatoes, dissolved bouillon cube and spices. Simmer for ten minutes.
Cut the tortillas into quarters and build the casserole in layers. Start with half the chicken mixture, half the tortillas, and then half the cheese. Repeat the layers and cook, covered at 350 degrees. Uncover for the last five minutes so the cheese can brown.
