'Cordon bleu' is French for someone highly distinguished in his field. It is often associated with a master chef. 'Chicken Cordon Bleu' lives up to its name. It is adapted from Veal Cordon Bleu, which is popular in France.
Ingredients: • 3 skinless chicken breasts boned • 1 cup grated mozzarella cheese • 6 slices ham or ¼ lb shaved ham • ½ cup melted butter or margarine • 1 cup seasoned bread crumbs
Method: Slice chicken breasts in half lengthwise. Pound until no more than ½ inch thick. Divide the ham and cheese between the breast halves and roll chicken around filling. Secure with toothpicks.
Roll meat in melted butter and coat with breadcrumbs. Place in a baking dish and bake at 350 degrees. Serves 6
