Chicken Marsala Recipe |

Author: 101TastyChickenRecipes.com Marsala is a fortified wine that is produced in Italy. Years ago, ethyl alcohol was sometimes added to Marsala to lengthen its shelf life for long ocean voyages. The fortified version is now popular in overseas markets.
Preparation Time: 15 minutes Cooking Time: 15-25 minutes
Ingredients: • 4 chicken skinless chicken breast fillets • 3/4 cup butter or margarine • 1/4 cup cooking oil • 1 cup flour • Salt, pepper • Enough milk for dipping (about 1 cup) • 3/4 cup Marsala wine • 6-8 medium mushrooms, sliced (about one cup)
Method: Cut chicken breasts in half lengthwise. Dip in milk and then coat with seasoned flour. Melt margarine and oil in skillet and sauté chicken pieces on medium high until golden brown. Turn often to ensure that they are cooked all the way through. Remove from pan and keep warm. Add mushrooms to skillet and sauté. Add Marsala and stir constantly over medium low heat until sauce has thickened. Return chicken to pan and turn, ensuring the pieces are covered with sauce. Remove from pan onto plates and pour remaining sauce over top. Serves 4.
