Chicken Pot Pie Recipe |

Preparation Time: 15 minutes Cooking Time: 40 minutes
Ingredients: • Pie crust pastry, enough for 2 two 9" pies • 2 cups chopped cooked chicken • ½ cup cooked carrots, diced • ½ cup cooked celery, diced • ½ cup cooked peas • 1 onion, chopped • 1/3 cup butter or margarine • 2/3 cup full cream milk • 1/3 cup plain flour • 2 chicken bouillon cubes
Method: Place piecrust in pie pan. Trim edges and set aside. Keep remaining dough for the top.
Cook chopped onions in butter or margarine until translucent. Stir in flour, then slowly add milk and two cups of water whisking constantly. Stir in bouillon cubes and season with salt and pepper. Cook until the sauce thickens. Remove from heat.
Fill prepared piecrust with chicken and vegetables. Pour thickened sauce over top. Cover with remaining piecrust. Trim edges and pinch together. Bake at 425 degrees. Keep an eye on the edges of the crust. You may have to cover with foil to prevent burning.
