Chicken Soup Recipe |

Preparation Time: 30 minutes Cooking Time: 1 hour
Ingredients: • 3-4 chicken pieces (inexpensive cuts are excellent, but you can use more meaty cuts as well) • 3 stalks celery • 2 carrots • 2 small onions • Salt, pepper • 6 cups water • Handful of chopped parsley • 2 chopped spring onions (optional)
Method: In a large saucepan put chicken, celery, carrots, onions, seasonings and water. Cover and bring to a boil. Skim fat from surface. Simmer uncovered for one hour.
Remove chicken from pan and, when cool enough to touch, separate meat from the bones. Return meat to pan. Sprinkle with parsley and spring onions.
