Chicken Stir Fry Recipe |

Preparation Time: 35 minutes (including time for marinade)
Cooking Time: 10-15 minutes
Ingredients:
· 1 lb skinless chicken breast fillets
· 1 chicken bouillon cube and 2 teaspoons cornstarch dissolved in ½ cup water
· 1 tablespoon vegetable oil
· 1 tablespoon rice wine or rice vinegar
· 4 teaspoons sesame oil
· 4 teaspoons soy sauce
· 2 teaspoons minced ginger (fresh)
· 2 teaspoons minced garlic
· 1 can sweet corn
· 1 cup snow peas (if not in season, you can use green beans)
· ½ cup green or red peppers (optional)
Method:
Cut chicken into cubes. Mix ½ the sesame oil and soy sauce with the rice wine and pour over meat. Let stand for 20-30 minutes. Mix remaining oil and soy sauce with the bouillon mixture.
Heat vegetable oil in a large skillet or wok. Working quickly and stirring constantly, add ginger and garlic. Cook for a few seconds and then add chicken. Cook meat for 2-3 minutes and then add vegetables, cooking for a couple more minutes. Finally add the bouillon mixture and stir well. Cover and simmer for 3-5 minutes. Serves 4
